Since Ashley Cole, the defenders to have broken through (as in, have made a first team appearance) have been: Phillipe Senderos, Ryan Garry, Johan Djourou, Kerrea Gilbert, Justin Hoyte, Armand Traore, Gavin Hoyte, Tom Cruise, Jernade Meade, Kyle Bartley and Ignasi Miquel.

Obviously a very elite collection of defenders right there.

I guess you could include Alex Song in there, too, since he initially broke through as a centre back then developed into a midfielder.
